Alta Langa Rosso di Langa is mild, sweet, and creamy with delicate hints of cooked milk and fresh grass. This cheese is crafted in northern Italy with pasteurized cow’s and pasteurized sheep’s milk. The rind is washed with Annatto during the aging process, giving Rosso di Langa its characteristic red-orange color. Annatto seeds come from the achiote tree and have been used for centuries to protect and color the surface of cheeses.
