At the Dongé cheese dairy, Xavier David Brie de Meaux AOP is made from raw cow’s milk then molded and chosen by master cheesemakers for a lovely and supple cheese. The cheese is ripened for at least 7 weeks on rye straw according to ancestral methods, that had since been abandoned and revived especially for Xavier David.

This brie is creamy with a notably earthy flavor.
