Look:    blue-green veins and a gorgeous natural thin rind
Feel:   Fudgy texture, definitely crumbly when sliced
Smell:  toasted walnut, praline, caramel, brown butter and saltine cracker
Taste:  Mild and mellow blue-mold flavor with earthy notes and a salted-caramel finish that lingers
