Milk: Pasteurized Cow Age: About 4 weeks Rennet: Vegetarian
Look: White paste with bits of yellow lemon peel
Feel: Soft, creamy, smooth
Taste: Mild and sweet, with sweet and zesty lemon
Pairs well with: Sweet wines, Muscat, Zinfandel, Sauternes, Sherry, Madeira, Port
Tastes good with: Serve with nuts, candied fruits. Drizzle with lavender honey and serve with ripe summer berries (blueberries would be especially nice). Add as a zesty surprise to a salad.
