Viejo Maestro
is made in the mountainous region of Extremadura, Spain, near the Portuguese border. It is made by the same family that produces Torta del Casar using a similar recipe, but with pasteurized goat’s milk, and a firmer texture. It is aged just over month and has a pleasant, milky sweet flavor.
Origin: Spain
Milk: Pasteurized Goat Age: 40 days Rennet: Vegetarian
Look: Straw colored rind with bloomy white mottling, white paste with some eyes
Feel: Semi-firm, with a pleasant creaminess
Smell: Gamey, slightly floral aroma
Taste: Fresh, milky, sweet, notes of grass and herbs, and a goaty, gamey finish
Pairs well with: Spanish reds or whites, or a medium sherry
Tastes good with: Marmalade, grapes
