Prima Donna (pree-mah DAH-nah) is a cross between aged Dutch gouda (pronounced HOW-dah) and Italian Parmigiano-Reggiano, this cheese smells like butterscotch candy and tastes not unlike a rich caramel sprinkled with sea salt. Its nutty, sweet flavor, and tangy taste is simply irresistible. Made with pasteurized cow’s milk, the 22-pound wheel of Prima Donna develops a deep golden interior with small holes throughout the paste encrusted with white protein crystals called casein.
