is a creamy, full flavored blue made with raw cow’s milk. Sweet with a medium-to-strong punch of blue flavor, this cheese is so good that it won Best Cheese/Dairy Product at the 2011 Fancy Food Show in Washington, DC.

Milk: Raw Cow Rennet Type: Vegetarian Age: 5 months
Look: Natural rind, white paste with vivid, deep blue-green veins
Feel: Semi-soft, buttery, creamy
Smell: Fresh, milky, strong
Taste: Creamy, sweet, fresh milk, strong Sparkling wine, sweeter whites such as Viognier, full-bodied reds like Syrah and Cabernet Sauvignon and vintage port
