Brunetis made in the Northern Italian village of Bosia by 25 year old creamery Caseifocio dell’Alta Langa, one of the pre-eminent Italian cheese exporters to the United States. This young, soft goats milk cheese with a delicate bloomy rind, silky smooth creamline, and cake-y core smells of creme fraiche and mushrooms and feels like silk on the tongue.Â

Taste:Â Goaty tang with hints of sweet straw and bread
Pairs well with:Â Prosecco, Moscato d’Asti, Chardonnay, Pinot Grigio, or a sweet, dark beer like a double boc.
Tastes good with:Â Once it’s brought to room temperature it will spread on crackers or bread like whipped butter. Brunet is also a perfect cheese for a warm goat cheese salad, also known as a salade au chevre chaud.
