Halloumi
is a firm, brined, and slightly springy white cheese from Cyprus. It has a texture similar to Mozzarella but has an extremely high melting point so it is excellent as a grilling cheese as it browns and holds its shape when grilled or fried, yet remains creaky-soft on the inside. The resulting texture is delightful and sometimes will make squeaking sounds as you chew, causing some to call it “Squeaky Cheese!”

Tastes good with: Traditionally served in the warmer months grilled alongside watermelon for a refreshing treat. It is excellent grilled or pan-fried and served atop salads.
