This rich, creamy and perfectly balanced  blue is from the Auvergne region of France and aged by premier affineur Xavier David.

Milk: Raw Cow      Rennet Type:   Animal     Age: 3-5 weeks
Look: blue veined
Feel: creamy, semi soft
Smell: Mildly earthy, mushroomy
Taste: tart, fresh cream, perfect balance of salt and blue
Pairs well with: Sauternes, tawny port
Tastes good with:  fresh pears, walnuts, warm baguette
Recipes: Linguine with Fourme d’Ambert and Fresh Basil
