Crucolo is an artisan cheese that comes from the Trentino-Alto Adige region in northern Italy. The milk to make this cheese is selected from the cows that roam the pastures beneath the Trento Mountains grazing on lush, green grass along the crystal clear banks of the Brenta River at the foot of the Lagorai Mountain range. It is a soft cheese aged for over 60 days in the cellars of Rifugio Crucolo. This unique environment gives the cheese its particular taste and rich aroma. Crucolo has a surprisingly tangy finish to its creamy flavor, not unlike a Swiss cheese, and the interior is irregularly pocked with tiny holes as well, but with a less aroma.
Aged more than 30 days, this toothsome yet supple semi-soft cheese pairs well with wine jellies and mostarda.
