BellaVitano Balsamic is a unique Cheddar-Parmesan hybrid created by cheesemaker Mike Matucheski at his Sartori Company in Antigo, Wisconsin. The sweet and nutty flavors of their original BellaVitano Gold cheese become even more delicious when bathed in Modena Balsamic, giving it an extra special sweetness. It is a consistent best seller here at Tastings, and has won numerous industry awards.

Look: Deep reddish-brown rind, moist with balsamic; moist, crystallized, ivory paste
Feel: Firm, slight crunchiness from crystallization, yet still very smooth
Smell: Earthy, fruity, sweet
Taste: Fruity, nutty, sweet, tangy
Pairs well with: Chardonnay, Pinot Noir, Sherry, Asti Spumanti, Weizen, Weizenbock, Pale Ales, Smoked Porters
Tastes good with:  Crusty artisan bread, dates, raisins, almonds, smoked turkey
