Short, twisty Trofie are ideally shaped for holding sauce. A classic from Liguria, along the Italian coast, where it stretches to the west toward France. Often served with Genovese Basil Pesto, and we love it also with Red Pesto with Truffles.
500 grams, made only from hard durum wheat flour and water. Hand-rolled.
