Bottega Ditalia’s organic Rose pasta is made for the brand by Pastificio Marella, a family-run artisan pasta producer in the province of Bari in Puglia. The dough is made from organic durum wheat semolina and extruded through traditional bronze dies, which leave the surface naturally rough so sauce clings rather than slides away. The pasta is then dried slowly at low temperature for three to four days, preserving the wheat’s aroma and creating a firm texture that expands gracefully during cooking.
