Why You’ll Love This
Zahara is an olive oil with real presence. Its aroma immediately suggests crushed tomato leaf and green herbs, followed by a structured palate and a clean, peppery finish that makes simple foods taste more vivid.
What Makes It Special
Oleificio Guccione produces Zahara from the native Tonda Iblea olive in the Iblei Mountains of southeastern Sicily. The variety yields relatively little oil, but the result is intensely aromatic, rich in green character, and naturally low in acidity when carefully harvested and milled.
Perfect Pairings
Pair it with tomatoes, grilled bread, burrata, beans, lentils, grilled fish, swordfish, steak, roasted vegetables, bitter greens, soups, pasta, or aged sheep’s milk cheese.
Serving Ideas
Drizzle over tomato bruschetta, finish grilled fish or steak, spoon over warm beans, add to vegetable soup, or serve with bread and sea salt. Its strong green profile also makes a memorable vinaigrette.
