Why You’ll Love This
This is a tomato-and-basil sauce for anyone who believes simplicity only works when the ingredients are exceptional. The tomatoes taste rich and naturally sweet, basil adds a fresh aromatic lift, and a little extra virgin olive oil rounds the sauce without making it heavy. It is polished enough to serve directly from the jar and versatile enough to become the foundation of dozens of meals.
What Makes It Special
Tudia builds this sauce around Sicilian siccagno tomatoes, traditionally grown without irrigation in the dry interior of the island. That demanding growing method encourages the fruit to develop concentrated flavor, dense flesh, and balanced acidity. The recipe remains intentionally restrained—tomatoes, onion, extra virgin olive oil, basil, salt, and a touch of sugar—so the character of the tomato remains at the center.
Perfect Pairings
Pair it with spaghetti, penne, rigatoni, gnocchi, meatballs, Italian sausage, grilled chicken, shrimp, eggplant, zucchini, mozzarella, ricotta, Parmigiano-Reggiano, Pecorino Romano, or warm focaccia.
Serving Ideas
Warm gently and toss with pasta, finishing with basil and Parmigiano-Reggiano. Use it as the base for pizza or baked ziti, simmer meatballs directly in the sauce, spoon it over polenta, or turn it into a quick seafood sauce with white wine and shrimp. For a simple supper, add white beans and wilted greens and serve with crusty bread.
About the Producer
Tudia is a small family producer in Sicily’s Madonie region with roots dating to 1964. The company grows its own siccagno tomatoes and transforms them into sauces and traditional Sicilian specialties that reflect the agriculture, flavors, and home cooking of the island.
