Roasted Tomatoes & Mediterranean Bulgur Salad


  • 1/2 cup DIVINA Roasted Red Tomatoes
  • 1/2 cup DIVINA Roasted Yellow Tomatoes
  • 3/4 cup Pitted Kalamata Olives drained, rinsed and cut into quarters
  • 1 cup Wheat bulgur
  • 1/2 cup Celery chopped (use inner ribs)
  • 1/2 cup Scallions chopped
  • 2 tbsp Fresh lemon juice
  • 2 tbsp Extra virgin olive oil
  • 3/4 tbsp Sea Salt
  • 1/4 cup Mint leaves torn, lightly packed


  • Mix the bulgur with 1 1/2 cups hot water. Set aside 1 hour. Stir from time to time.
  • Combine the bulgur with the olives, celery, scallions, lemon juice, olive oil and salt
  • Divide among individual dishes or a shallow serving bowl
  • Arrange the tomatoes on top of the bulgur
  • Scatter the mint over the tomatoes
